Understanding how geography shapes flavour.

Origin is often printed on a bag as a single word, but it describes a chain of decisions: where the coffee grew, at what altitude, which variety was planted, how the cherry was processed and who made those choices.

Altitude matters because cooler nights slow ripening. Slower ripening concentrates sugars and acids, which is why high-grown coffees often taste brighter and more defined.

Processing shapes the cup as much as geography. A washed coffee tends to taste cleaner and more transparent; a natural, dried with the fruit intact, usually carries more sweetness and body.

When we talk about a sense of place, we mean the whole picture. Traceability is not a marketing detail, it is how we know what we are tasting and how we buy it again next season.
